Baked cauliflower with turmeric on colorful kale-rice
This delicious recipe is perfect for a delicious dinner or a hearty lunch as it contains a lot of anti-inflammatory power. Quickly prepared, with a total cooking time of just 30 minutes, this recipe is a perennial favorite in my kitchen.
Shopping list – you need:
cauliflower
rice
kale
corn
1 onion
2 pieces of fresh garlic
Ginger (fresh or powdered)
olive oil
coconut oil
salt
pepper
oregano
basil
turmeric powder
If you have everything at home then the cauliflower and rice are prepared separately in the following way:
Baked cauliflower with turmeric
Ingredients:
1 cauliflower
4 tablespoons olive oil
1 tbsp turmeric powder
1 pinch of salt
1 pinch of pepper
1 teaspoon oregano
1 tsp basil
Divide the cauliflower into larger florets. Put the olive oil and all the spices in a small bowl and stir everything together, then evenly coat the cauliflower with it. Place the cauliflower florets on a piece of baking paper and bake them in the preheated oven for 20 minutes.

Fry the onion, garlic and ginger in coconut oil, then add all the vegetables and let simmer for a while. Add the spices, then 1/2 to 2 cups of water and let everything cook together. Add 1 cup of rice, let it simmer for 5 minutes, then turn off the heat (or put it on small flame) and leave the pot on the hot plate for 20 minutes with the lid closed.
Serve the cauliflower on the rice. You can serve this dish with green salad or arugula.
